"Thank you for being instrumental in my success, and for giving me a chance to fulfill my dreams."

Jaclyn Prince
LaGrangeville, NY
BPS Culinary Arts, August 2007
McCann Foundation Scholarship

All CIA students do an externship as part of their associate degree program. Many go to work in the kitchens of resorts or at high-end restaurants throughout the country and the world. Jaclyn Smith's experience was different.

"I did my externship at Bobolink Dairy and Bakeyard in Vernon, New Jersey," said Jaclyn. "I basically lived and worked on the farm. I milked cows and made unpasteurized cheese from that day's fresh milk." Jaclyn tended to the cows' health issues, fed the calves, pigs and sheep, and baked bread in a wood fired oven. "This experience was a wonderful eye opener. I had many responsibilities, and the work exposed me to farmer's markets, fresh produce, farm life, baking bread, building fires, animal care, and sustainable agriculture."

Jaclyn began cooking with her best friend when they were children, making food for their families. As a student at Arlington High School, "I was inspired by my cooking teacher Mrs. Zanglein. She is the one who taught me my preliminary knife skills, cooking techniques, and encouraged me to go to the Culinary Institute of America."

Jaclyn's first food service job was at PC's Paddock in LaGrangeville where she made soups and desserts. Now, "My professional goals are to be able to travel around the world to be exposed to the food and beverages of various cultures."

This scholarship has increased Jaclyn's chances of succeeding outside of the CIA.  "I truly appreciate your generous scholarship support," said Jaclyn. "It has helped me greatly by allowing me to concentrate more on school work, rather than on the large financial burden of student loans. Thank you for being instrumental in my success, and for giving me a chance to fulfill my dreams.

"I love the Culinary Institute of America and I am so grateful that I have been able to come to this school," she continued. "To be able to experience its unique faculty, student body, and be so close to the beautiful Hudson River has contributed greatly to my future. I have enjoyed my classes, time with the new friends, and the daily life experiences that have completely enriched my life by attending the CIA."

The James J. McCann Foundation Supports Local Development by Giving to the CIA

The CIA is proud to recognize The James J. McCann Foundation for its generous support of the college, and for its commitment to the Hudson Valley. The McCann Foundation has been a leader of “progressive human welfare work” since its founding in 1967. Since then, the McCann Foundation has served as a community advocate, dedicating the majority of its gift allocations to improving the region.

Former President of the McCann Foundation, Mr. Jack Gartland was a dear friend of the Institute until his passing in 2003. Mr. Gartland was instrumental in facilitating the CIA’s move from New Haven to Hyde Park in 1972, for which he helped secure financing for the new campus, and served as a legal representative at the closing. A Fellow of the Institute since 1975, Mr. Gartland was named an Honorary Trustee of the Institute in 1993. He was also influential in the McCann Foundation’s funding of the McCann Center at the Student Recreation Center, and The James J. McCann Memorial Scholarship Fund. The scholarship assists Dutchess County residents demonstrating a passion for the culinary arts in earning their degrees. Bachelor’s student Aaron McClafferty ‘05 said, “Without this scholarship, my wife and I were unsure how we were going to cover tuition expenses. Thanks to the help of the McCann Scholarship, I will now be able to continue my education at this prestigious school as I press on towards my dream of becoming a chef.”

Michael G. Gartland, Secretary and Director of The McCann Foundation and son of Mr. Jack Gartland, remembers a story his father told him about the McCann Foundation’s devotion to education. While Mr. James McCann was at home, not far from Our Lady of Lourdes High School, he discussed with Mr. Gartland the plans for his estate. Having no children of his own, Mr. McCann pointed to the students walking home from Lourdes, when he said, “Make sure you take care of those kids.” It has been a mission of the McCann Foundation ever since to promote education. The McCann Foundation is pleased to extend its assistance to schools like the CIA and other local institutions.

The McCann Foundation’s history of philanthropy addresses some of the area’s most fundamental concerns. Through the CIA’s partnership with the McCann Foundation, we aim to provide exceptional education and leadership while positively impacting our shared community.
